General Tormek Questions / Re: Which model?
August 04, 2015, 11:33:01 AM
Hi,
It´s a SA-250. Came with a natural stone. If it has flat sides and not dished were the label is its a natural stone. Its from the mid eighties.
The honing wheel is rubber with Aluminum oxide grid and are not to be used with the compound. Removes the burr faster but will not give the same sharpness as the leather wheel.
The jig for the chisel and handplaneblades is called SVH-60 and was the model we had before we made the EE-76, its really handy when you have shorter chisels as it´s base is closer to the stone. You need to be careful when mounting the tool in the jig as it does not have a guide in it.
The horizontal base and supportbar was mounted some years after it was first bought.

Hi,
On regular chef knifes or blades where the back is no more than 3-4 mm its extremely little difference in the edge-line. The knife jigs are designed to fit the most common knife models. We have several knife-sharpening business companies who uses our jigs and even several knife resellers and brands who recommends us for sharpening their knifes.
On more powerful knifes, like a hunting knife with a wider back you can see the difference more. So than you need to mark both sides.
A thing that almost never comes up in a discussion like this is than many knifes don't have the  the edge centred in the blade. It´s pretty easy to see, before you start sharpening a knife, hold the knife with the tip upwards and check if the edge-line is the same on both sides, you will be surprised how many knifes that are off-centred, and many times it´s the more expensive hand made knifes.

The jigs are designed to sharpen the most common sizes, some knifes you need to find and learn the technique so you get a "fabric" edge line.

Best,
Stig.

General Tormek Questions / Re: EzyLock blocked
June 29, 2015, 04:32:18 PM
Hi,
There should be no need of any tool to be used. Even I have had some Ezylocks that where hard to open. The Exylock has higher torque than the old nut, but please read this link so you are sure that you do it the right way http://tormek.com/international/en/spare-parts/shafts/msk-250-stainless-steel-shaft/

Do as following:
Be sure that the honingwheel is mounted correctly so the pins on the honongwheel is in the holes on the drivewheel.
Do as the link tells you but also use a a quick powerfull pulse instead of draging.
Hopefully you understand what I mean.

Hi,
Ken and Herman is right, there is no SB stone for the T3/T4. And the 200 stones are 40 mm wide, 250 are 50 mm.

That puzzles me a bit, why would it not work?
I don´t think I have sharpened scissors like that though.
One tip is not to hone scissors,  the little burr from the sharpening should be removed by drawing the scissors through the end grain of a piece of wood.

Grepper,

I have the 8" chef knife with a wooden handle. I have sharpened it 3 times, using the SG and the SB stone.
I did not need to sharpen it but I had to try  ;D
The first thing I noticed was that it takes a long time to sharpen it as it feels like the Amorphous metal is streching. I tried both light and hard pressure and combined I got a new edge one it. Have not had any need to sharpen it again, this was about a year ago.
I do have other knifes that are sharper but they need to be taken care of about every second month now that I got the right angle on them that works in our house.
