Hello and best wishes
I run a mobile set-up out of the back of my truck.
Use an AGM marine battery and a 2000 watt modified sound wave. 
powers my T8, Nikon low speed 10" paper wheel set-up, Viel 1x40, twice as sharp scissor set-up
Sometimes need more start-up amps for the nikon.  3 years and all still working well.  RIP Wootz.

USAKnifeMaker sells various widths in 18 inch lengths.  Works well for me.
I cut them to length as I need and put a company sticker on when returning knives to
residential customers.

Found a 150 and 400 on Prime for $17.50 us.  Lowes has a 7" x 3" Tie plate in the lumber section for $1.98 that fits
perfectly behind them and in the square edge jig.  Can't wait to play.

I sharpen for many professional working chefs.  Usually their pro set is Victorinox or Forschner or other light weight
quality stamped blade on a good handle.  Many forged blades are too heavy to use all day for a pro.  Once you get comfortable with a 10 inch the 8 inch looks small.
All depends on the end use.

General Tormek Questions / Practically free pivot collar

I've been wanting to learn to use a pivot collar.  I thought of this.
I have these hard foam practice golf balls.  Very dense foam and water resistant.
I disected one in half.  Drilled hole just smaller than the diameter of the jig shaft.
put golf ball above the knob, flat side against the knob.   2 pivot collars for 75 cents.
Now I just need to learn to use them.

I Use a round ceramic stick and sharpen from the underside, then take the burr off the top.

Thank you all for your feedback.  I did find Info on the BESS forum.  They offer a Certificate of Membership
for sharpening businesses that use BESS equipment.
All I did was send to mikeb@edgeonup.com basic information about my business, and what BESS equipment I was using,
and where I purchased it.  Within a couple hours, Mike had sent me back a Certificate, along with copies of the BESS Certified logos
that I can use on my website and in any marketing materials. Any one using BESS should really take advantage of the legitimacy this adds to your operation, and at no charge.

Thank also for the info on the glue and the sleeves.  Don't know if i'm going to dive in yet.

Hi ROC, Each of my accounts has a 16 x 10 box that I buy at
local Walmart.  ( sorry )  When I switch out the account, the old knives go directly
into the box and everything is bleach soaked and cleaned before being sharpened.
After sharpening, I disinfect again with a wipe and they go back into the sleeve.  The sleeves only
see clean, sharp knives and protect during transport.

I also have a question about the BESS logo.  I use a BESS PT50A
to verify sharpness of my edges.  Does that allow me to say that I am
BESS certified and use the logo, or do I need to license with BESS.
