Jeff  I have one more question when you sharpen the  Scissors  in the video how do you know when to stop sharpening? Most of the time you stop when you get a bur along the entire edge. But I don't think you say anything about a bur in the Scissors  video . Thanks again

That is exactly right.  When you have a single facet bevel and a slight wire edge on the face of the blade, you're done.
