Thanks for your help, and thanks Stig for taking your time to explain.

Perhaps it was my English that got everything confused.

That is correct grepper, i grinded the fillet knife to 20° on each side, but when measuring on the blade instead of on the bevel i set the VM-200 to 10°.
Even if i don't explain it correct, I now understand how it wors :)

If you set the AngleMaster to 30o that will indeed give you a 30o bevel on each side of the knife, which would make the edge angle 60o. That's way too large for a kitchen knife. A machete or cleaver, maybe, but even then it's large.

A typical kitchen knife recommendation of 30o refers to the edge angle, so you'd grind each side at 15o
