Hello,
Just got the T-8.
Read through the manual. It states when sharpening knives, the "correct mounting position: ⟵a⟶" will make the bevel and the edge angle the same along the entire length of the blade. (see image from manual below).

However it doesn't explain how to calculate and set this position for various knives.
Any guides, suggestions or tips would be greatly appreciated.

Thank you.

Take a look at this thread... Knife Point Setting Template, for some ideas.

Part of the answer depends on whether you lift the handle, or rotate the blade to follow the belly to tip area (or some combination of these).

One way to check (regardless of which method you use), you can mark the edge with a Sharpie type marker, and check that you're removing metal evenly along the edge bevel.  To test (while learning), you can set the sharpening angle you want, then hold the knife against the stone at various points with the wheel off, and manually rotate the wheel, to see where marker is being removed.

Mostly just takes practice to get a feel for it... get some cheap knives you don't care about, and try different clamping locations, and see how different clamping locations affect the bevel width, (mainly in the belly/tip area).
