I'm finding the instructions a little unclear.

Looking at p. 7 of the manual to determine the height of the block ...

The table lists 2" for an 8" grinder, but is this the gap between the top of the block and the wheel centre (given as S in the diagram) or the height of the block (the table title)?

S is said to be the same for 8 and 10" grinders, and grinder mount heights vary, so I'm guessing the former is the way to go.

How have other users set theirs up?

This is a bit late but I've just joined the forum and have been enjoying reading the posts.

Ellsworth is insistent that you maintain the original 60 degree bevel at the tip; it sure makes hollowing around the transition from wall to base in a bowl easier than lower angles.

My first post, in reply to your first post ;-}

and a while ago at that.

I'm a turner.  For reshaping HSS tools a dry grinder with a white or pink wheel works quickly and cheaply. 

My floor is covered in dust and shavings usually and I've never had a problem with sparks.

That said, I've seen guys dress their wet wheel to 200 and just give the job the time it needs.
