To be more specific and correcting a mistake at typing, 7 degree clearance and 60 degree edge (in stead of 118 degree) for the number 5 and  6 facets. No number 7 or 8 facets ;-)

I just now tested my other inverter. 12 V DC 230 V AC 300 W on my T4. Works excellent even though it is not a pure sine. The smaller inverter I have produces a modified square edge sine wave. The 1000 W inverter produces a pure sine wave. Best regards, Janne

I support my computer printer in my car with a input DC 12 V output AC 230 V 1000 W . Rated power  for the printer is 350 W, but during start/worm up there is a heavier load on my 1000 W inverter. For a 200 W grinder I would use a 300 W inverter. The starting current will not cause any big problems. I also use an 800  W angle grinder with my 1000 W inverter with no problem. The inverter has a long life time, my inverter is used on a daily basis for the printer the last 12 years. One important thing is to use wires with enough area for the current, voltage and length. Battery choosen for estimated work time.

They have some small and nice generators.
The smallest model will do the job with a nice genuine sine curve, often made for computers and battery chargers.

The main thing is to use the grind stone to loosen the nut and NOT try to loosen the nut itself due to the friction between grind stone and nut.

Is the spine thickness 1,4 mm parallell or does it get thinner closer to the edge?
I think that using a shim to keep the knife centered to the shaft of the jig you have to compensate for eventual unparallellity.
One of my cooking knifes is about 3 mm thick at the top and about 1 mm at where the grinding area begins with a height of about 45 mm.
For me if the knife jig has an ofset ( 1,5 mm?) I would take in consideration if the blade of the knife is parallell or coned ( from top to edge). This fact mean that there is different needs of shim to get both the top and the edge centered to the shaft of the jig.
Just a humble question, is the coned shape your problem, since you seem very exact and thorrough in your description?  14,5 and 15,5 instead of 15 and 15 due to a parallell compensation with shim for the top and to less shim for the edge?
Position the knife in the jig, with shim. Try to measure the edge compared to the shaft of the jig if you get the edge centered.

A common 8 mm drill bit for hand held maskines.

Yes. When you have a smooth surface, use some water and let the fibres raise for 30 minutes, then sand. Repeat two times more.
Every wood craftsman has his own method I think.

When I am sanding I use water ( waiting at least 30 minutes) three times with fine grit paper at the end. My father who is a violin maker tought me that method.

20+ mm are sizes i like best to grind, heavy strong drill bits that cuts through steel like it is butter.
