For what it's worth, I've noticed my stone rusting a bit if I leave it overnight.  I've taken to cleaning it out the water tray everytime I finish using it. I know I have the stainless steel shaft, but even stainless will rust given time.  As for the rust on the stone, I'm sure it has little or no operational affect on it.  I was amazed at how quickly it would stain.  I love my T-7 tho, how fast it works.  I am curious to see what it would look like after 7 years.

I know I'm no expert, but I've done my time in fast food joints and U.S. Navy galleys.  Like Jeff said, soapy water should be enough, even a bit of bleach mix should be adequate.

I've use a flitz compound with great success.  It orginally came with a leather strop I purchased from a knife making company. I prefer the flitz over the compound that comes with the T-7.  Does a better job IMO.  Just be cautious which flitz you get, I ordered what I thought was the same type of flitz, but in a larger bottle, doesn't work as well.   I'd been using the stuff that comes in a grey metallic tube 50 grams size.  On a side, note, I just read the other day about soaking the leather in mineral oil.  Works great, and really helps out.

Thanks for the reply, I've been using the knife jig successfully,  but it can be difficult to clamp properly.  I've ended up using another piece of blank steel, of the same thickness on the other side of the jig, and it works.  However, I was hoping for an easier, better option.  The T-7 is a phenominal product, and exceeds any of my expectations.  Perhaps there is an aftermarket product for that?  Any advice would be greatly appreciated. 

How well would the planer jig work for making straight hollow grinds on custom knives?  I need another jig for that, something that would hold the knife straight when going back and forth, similiar to the square edge jig, with two holes for the guide rod.  Thanks for your help!

I've really been enjoying my T-7 for the past month or so.  People now come to me all the time asking for their knives to be sharpened.  While I've been succesfull at sharpening a  tanto point on quite a few knives so far, I've been less than happy using jigs I have.  Is there a better jig than the knife jig for this process?  Thanks!
