I have had the same concern with scissors.  The 60-degrees has something to do with that.  Have chosen to take more "passes" over the wheel with the blade with less pressure.  This seems to have mitigated most of the concern for me.   Try it.

Have the same concern - I set my machine on a square rubber mat.  I think the original intent of this mat was for a door - it is roughly 12" X 18".  
When done sharpening take the mat and hose it off.

I put a small amount of Tri-Flow on from time to time and smear it around with my finger.  Have had no problem with any of the jigs binding or not moving smoothly.
