I am new to turning, so I picked up the SVD-185. Can I use this to sharpen my regular gouge, or should I pick up an SVS-50 for that purpose?

The SVS-50 should be used for roughing gouges and any gouge where you do not want to create a back grind or "fingernail" type of profile.

Does the SVD-50 also do my skew and parting tools?

Yes, it does.
