Title: chisel grind knife

Hi, it is my first time to sharpen a chisel type grind knife blade. What is the ideal angle for this type
of knife? and how do I set it up using the angle master.  If the reading is 30 degrees it seems it is
just half the reading and not 30 :-(

Any help would be greatly be appreciated :-)

Not sure what a chisel type grind knife blade is.  If it's ground on one side only, and you want a 30o edge angle, you would set the bevel angle at 30o.  On the other hand, if you are grinding on both sides and you want a 30o edge angle, you would bevel each side at 15o.

That's a pretty sharp angle.  It would be used for fine slicing.

For chopping you'd need a larger (more blunt) angle.

I did a cleaver at 60o, that's a 30o bevel on each side.

Somewhere in between these two extremes is a good compromise in most cases.
