Can anyone please advise me, will the Profiled Leather Honing Wheels fit my Supergrind 2000.

Yes, they will.  All Tormek accessories fit machines of any age...well that's not quite accurate, there are some very, very early models in Europe that don't conform to the current standard, but they're over 30 years old now.
