General Tormek Questions / Pressure when sharpening

Since purchasing my T7 system in November of last year I have sharpened about 100 items, mainly knives but some scissors.  I have had to "true" the wheel several times.  My concern is that last Nov. my 250 mm wheel has shrunk down to 230 mm.  I suspect that I am putting too much pressure on the jigs when sharpening so... my question is how much pressure is too much and how do I tell what the correct pressure is.  Is it just a matter of practice?

I recently sharpened several pairs of scissors sold by the Singer Sewing Machine Company.  The blades are triangle shaped ( front to back ) and I had difficult time clamping the blades in the scissors jig and maintaining the sharpening angle. Does anyone have any suggestons to make clamping them easier next time.  Any help gratefully appreciated.

I feel sort of stupid about asking this question but I will anyway.
The SP-650 that I have has two different textures.  The grey side, which to me feels relatively smooth and a black  ( darker ) side which to me feels coarser than the grey side.  My question is which side do I use to change the stone to fine grinding? I really do not want to "wear down" my stone any more than I have to.

Just to clear up and finalize the issue - the users manual that came with my system was v9.6 and did not mention the ezylock system.  When I downloaded v9.7, after getting help from the forum, the information that I needed was included.  I do appreciate help given.

Help!  I am trying to remove the grinding stone on my new T7. I cannot budge the Ezylock nut even with a pair of Channel lock pliers.  Did I omit some step when installing the stone or am I doing/omitting some step now when I am attempting to remove the stone?  Please help!
