For once I resisted buying additional wheels for my T-8. I am still content with the SG-250 and it does a great job. Lucky for me no super steel knives have come my way.

When you look further into burr formation you will also find the burr is also dependant on the steel. Soft inferior blades are almost impossible to deburr effectively as the bur just moves rather than being honed. Super steels at the other end of the spectrum require a special technique as shown in the previously mentioned book by Vadim

I would be interested on your impressions of how the composite wheel and the leather wheel stack up side by side using your normal sharpening stone.

I use the fluorescent tube light that is over my work bench. My Tormek sits on an old microwave cart. I am 6'4" and the extra height of the cart lets me stand in a relaxed position. I really like your setup.

Quote from: austijp on May 06, 2023, 08:55:21 PMI just took a couple of my kitchen knives and increased the angle to 15 deg and honed a couple degrees higher on the 2nd step and low and behold I've finally broke 100 Bess.  I will probably still stick with 17.5 deg on most of the kitchen knives I sharpen but it's nice to see I can achieve those types of results.  My wife of course is going to raise heck with me because her knives already scare her, I'll have to coach her through it I guess.

My wife has one sharp knife she is comfortable using. If she finds that it is not good for what she is doing I end up doing the cutting. I am sure she could use all the knives but it is her choice not to. I have spent some time with her, my daughter and her daughters teaching them knife skills. I have not seen anything the oldest (12 Years) will not try cutting. Her speed is gradually improving. Show her proper finger position, using a steel and washing and her comfort will increase. My kitchen knives are all sharpened at 14° and hone at 15.5°. For my own I use the leather wheel followed by a wheel change and 1µ diamond spray

Your edges are very sharp and like previously mentioned sharper than most out of the box knives. I would have no problem charging for your work. Unless someone asks they will probably not appreciate a sub 100 BESS sharpened knife. I spend time teaching people how to maintain the edge and proper use and care.

I would follow Ken's advice if you have not trued your stone in a while. If it is running true the grader will work as well.

Knife Sharpening / Re: Greetings: Past Tormek Junkie

Welcome Daniel to the forum.

What are your goals with the new T8? Are you chasing ultimate sharpness or just after a really good edge? I am normally an accessory junkie but I resisted with my T8. The only things I have that are extras is a front vertical base for guided honing and a spare leather wheel for diamond hooning following Tormek paste. I can get an exceptional edge with these two add ons. If I was sharpening super steel knives I would invest in extra wheels. So far none of the people I sharpen for have invested in those kind of knives.

General Tormek Questions / Re: Brand new T4

I would start out sharpening your older least prized knives. Common advice is to practice on cheap low quality knives; I have found many of these hard to sharpen and properly hone as they are just too soft. When I started I found sharpening pretty easy to do but struggled for a while with honing. I got the hang of freehand honing but I did not achieve the sharpest edges until I started using guided honing.

I have one of these as well. I concur with deburring using a flat stone. I also have touched up mine with a ceramic rod that fits in the tooth before using flat stone.

For longer posts I always use MS Word. I set my login to forever as my PC is in a trusted spot as well.

Interesting subject.

I hope they cover slicers with round blade.

Just a note the Knife Grinder app no longer seems to work and is not available in the APP store.

I bought a second leather wheel and have had good success with 1µ diamond paste. I like using just the T-8 and not buying a low speed grinder and fitting it with supports and additional wheel.

I would discuss what you intend to do with a customer beforehand. Some may be concerned with looks over performance.
