How to prevent concave blade on thick heel knives

Sorry new to the forum I was wondering if there is a video that explains how to sharpen knives with a wide heel and not create a concave blade?

Can you be a little more specific about what you mean by wide heel?  Are you talking about bolstered knives, like many from Germany?  Or do you mean wider from the edge to the spine?
