I guess the key point is in "similar performance to a stainless steel dinner table knife". I have to agree there are some blunt specimens.

It appears the comparisons are being made to a knife that looks like it was a steak knife from a dinnerware set and a plastic knife. I don't think any of these knives are what we would classify as very sharp. The process they use to chemically alter the wood is very interesting.
Sharpen the knife blade
Hone edge until perfection
Cut with joy and ease
