Good starting point. Thanks.

Sharpco,

In your tests, did you have any problem with either wheel glazing?

I use tap water. But I haven't the glazing problem.

I think that pressure and grinding direction can be variables.

Today, I tested SB-250. Here is the result.

Low pressure: SB removes metal faster than SG
High pressure: SG is faster than SB.

I happened to notice today that your earlier quote referenced pressure and direction... I was wondering if you did any testing on direction making a difference?

cbwx34.

I use jig when I sharpen knives toward the edge direction, but when I sharpen it reverse direction, I do it with freehand. Therefore, it is difficult to make an accurate comparison.

I think the pressure is more important than direction.

Ok.... thanks!

I sharpen most knives grinding away. I think both pressure and direction are important.

When I use a SVM jig, I grind always (from the horizontal position).  When I use a platform, I grind towards (from the vertical).
