symmetrical and asymmetrical bevels

I recently converted an ambidexterous santoku knife to left handed by grinding away the bevel on the right side. It was easy to do. The knife seems to work a little better left handed. I am not ready to decide at this point. It certainly works poorly right handed.

Most of us will probably never do this. The reason I have posted this topic is because I once did almost the same thing accidentally. I ground too much on one bevel before starting the second bevel. This was not difficult to correct, but did waste some steel. The moral of this story is to be sure to balance the number of passes on each side for equal bevels.
